Lemon Drop Mocktail

You can never go wrong with a refreshing beverage on a warm day, and this Lemon Drop mocktail is no exception! Made with a homemade lemon simple syrup that’s both tart and sweet, fresh raspberries, and topped off with Gem + Jane Yuzu Raspberry Rose, this cannabis-infused mocktail just might become your summer go-to. This recipe makes 1 drink, which uses about half of the can of Gem + Jane, which means there is less than 2mg THCV, per serving.

Equipment

  • Silicone ice cube mold
  • Small saucepan
  • Small strainer/sieve
  • Barspoon

Ingredients

For the lemon simple syrup

  • 1 lemon, zested
  • cup lemon juice
  • 2 tbsp water
  • ½ cup cane sugar

For the cocktail

  • ¾ oz lemon simple syrup
  • 3-4 fresh raspberries
  • ½ can Gem + Jane Yuzu Raspberry Rose

Instructions

  • If you are preparing a fancy ice cube for your cocktail, fill a silicone ice cube mold of your choosing with filtered water. Freeze overnight.
  • In a small saucepan, combine all ingredients for the lemon simple syrup over medium heat. Bring mixture to a rolling boil. Then, turn down the heat and let simmer for about 10 minutes, stirring occasionally. Strain into a jar and let cool.
  • Place an ice cube in a clean glass. Add ¾ oz lemon simple syrup, a few raspberries, and top off with Gem + Jane Yuzu Raspberry Rose. Stir mixture using a barspoon. Optional: garnish with fresh mint
